These Homemade Elderberry Gummies are easy to make and will support the whole family’s immunity.
This unique black berry is packed with phytonutrients, antioxidant rich and high in vitamin A, potassium and vitamin C. The elderberry is one of the highest sources of anthocyanins, the coloured pigment found in dark fruit. Anthocyanins are thought to contribute to the traditional immune-supporting properties of elderberries.
The Elderberry has been proven to have an anti-viral effect. Not only can it reduce the severity of a virus but also the duration. It is the perfect winter remedy both as a preventative and when a cold or flu strikes.
Firstly add the gelatin to a small bowl, pour over the cold water, stir and leave to bloom for 5 – 10 minutes.
While you are waiting for the gelatin to bloom prepare the moulds. Place the moulds on trays to ensure easy transfer to the fridge (otherwise they are wobbly). Gently grease the moulds with a little coconut oil.
When the gelatin is ready pour the elderberry syrup in to a saucepan and warm gently. Don’t let it get too hot. Add the gelatin and stir until it has all dissolved and there are no grainy bits left.
You are now ready to pour the syrup in to your moulds. I used the pipette that came with the kit and it makes the whole process a lot easier.
This recipe makes over 100 gummies depending on the size.
Transfer the trays with the moulds to the fridge and leave to set for a few hours.
When they are firm pop out of the moulds and add to a container and store in the fridge.
These anti-viral gummies can be taken daily, increasing the dose if you have a cold or flu.
